Pike Place Market Guide for Chefs and Food Buyers

The Public Market Center sign at Pike Place Market in Seattle

This Pike Place Market guide is for chefs, buyers and restaurant owners, not sightseers. The short version: go early, before vehicle access closes at 10 a.m.; start at the long-running fish counters and produce stands on Pike Place; finish at the pantry shops; and park in the Market garage on Western Avenue.

Pike Place Market has operated in downtown Seattle since 1907 and calls itself Seattle’s original farmers market and the center of locally sourced, artisan and specialty foods. For a food professional it is part supplier, part research trip and part reminder of what good product looks like.

Here is how the Market works, the specific vendors worth knowing, and the logistics that make a sourcing visit efficient.

Why the Market matters to a working chef

The Market’s origin is a sourcing story. According to its official history, it opened on August 17, 1907, after a city ordinance aimed at middlemen who were price-gouging while farmers barely broke even; onion prices had jumped from 10 cents to a dollar a pound. Six to twelve farmers arrived with wagons on opening day and sold out by lunchtime.

It nearly disappeared. On November 2, 1971, Seattle voters backed preservation by a 3-to-2 margin, creating a historic district, and in 1973 the Pike Place Market Preservation and Development Authority was set up to run the Market as a public trustee. Today that authority manages more than 500 small businesses, and the Market describes itself as one of the oldest and largest continuously operating public markets in the United States.

For a chef, the value is concentration. Seafood, produce, specialty groceries, spices and dairy sit within a few blocks, sold by businesses that have spent decades learning their product.

Treat Pike Place as a supplier with a hundred years of product knowledge, and go when the vendors have time to talk.

When to go

The Market’s visitor information gives the rhythm of the day. Breakfast, produce and seafood vendors open from 7 a.m., the farm tables run from 9 a.m. to 4 p.m., the crafts market from 11 a.m. to 4 p.m., and most of the Market is active from 10 a.m. to 5 p.m. Restaurant hours vary.

  • Go before 10 a.m. Vehicle access on Pike Place is limited from 10 a.m. to 5 p.m., with full access before and after.
  • Talk to vendors early. The first hours are when counter staff can walk you through what came in.
  • Visit more than once. The Market lists more than 70 farmers, and what is on the farm tables changes through the year.

Individual shops keep their own hours, and some close on certain days, so check each vendor’s listing before you plan a route.

The fish counters

Pike Place Fish Market

At 86 Pike Street, under the Market’s landmark sign, Pike Place Fish Market has operated since 1930. It is famous for throwing fish, but the practical point for professionals is its focus on fresh, wild Pacific seafood, plus packing for air travel and overnight shipping within the US.

Pure Food Fish

Pure Food Fish runs a single long counter in the center of the main arcade. The Market’s listing traces it to 1911, when Jack Amon began selling seafood from a stall, and says it has sold local fish and shellfish at the Market for more than 100 years. It will also ship fresh seafood anywhere in the US.

City Fish Co.

In the heart of the main arcade at 1535 Pike Place, City Fish Co. is one of the Market’s oldest seafood stands. It opened in 1918 as the Municipal Fish Market and sells a full line of fresh seafood, which it describes as fisherman-direct.

Compare all three on the same morning. Ask what landed that day, what is previously frozen, and whether the fish is wild or farmed. Our seafood buying guide covers the questions to ask any fish supplier.

Produce stands and farm tables

Frank’s Quality Produce

Frank’s Quality Produce is a family-owned highstall in the Corner Market building at 1508 Pike Place. The Genzale family’s history in the Market spans four generations. Produce is hand-selected and hand-trimmed each morning, and the stand offers wholesale delivery to local restaurants, which makes it more than a browsing stop.

Sosio’s Fruit and Produce

In the main arcade at 1527 Pike Place, Sosio’s has been family-owned for more than 50 years and says it carries the largest and most varied produce selection in the Market, with more than 120 items every day. It sources seasonal items from independent local farms, and its biggest, juiciest peaches, pears and melons get an “oh my god” label.

The farm tables

The farm tables are where you meet growers directly. With more than 70 farmers listed, it’s a practical place to find small producers for a seasonal menu and to start conversations about regular orders.

DeLaurenti Food & Wine

Established in 1946, DeLaurenti sits at 1435 1st Avenue at the entrance to the Economy Market. The Market describes it as Seattle’s most complete source of specialty ingredients from around the world, with more than 200 cheeses, cured meats and more than 1,800 wines. It’s the stop for imported pantry staples you can’t get from a broadline distributor.

MarketSpice

MarketSpice traces its history to a small tea and spice shop that opened in the Market in 1911. It sells a wide range of teas and spices in bulk or prepackaged, which suits a kitchen testing a new blend before committing to a larger order.

Pike Place Market Creamery

On the east side of the cobblestones in the Sanitary Market, the Pike Place Market Creamery has operated since 1978. It sells milk, including organic and non-dairy options, plus butter, eggs, yogurt and cheese.

Parking, transit and getting product home

The Market’s parking and directions page covers the essentials for anyone arriving with a vehicle.

  • The Market garage has three entrances: 1531 Western Ave, 1901 Western Ave and 1530 Alaskan Way. It is open daily from 5 a.m. to 2 a.m.
  • Height clearance is 6’8″. Many cargo vans won’t fit, so plan street parking or a colleague drop-off if yours is tall.
  • Early arrival pays. The garage has an early-bird rate for arrivals before 9 a.m.
  • Transit works for a scouting trip: Westlake and Symphony Link light rail stations are a few blocks away.

Bring insulated bags or a cooler with ice packs for seafood and dairy, and ask counters to pack fish on ice for the trip back. If you are buying for regular service rather than a one-off, ask vendors directly about delivery and standing orders.
